초록 | Phenolic compounds of plants are considered the most of important bioactive constituents such as antioxidant or anti-inflammation properties. The aim of present study was determine the phenolic profile (indolic phenol and flavonoid), the antioxidant using two different methodologies (DPPH and ABTS) and the anti-inflammatory properties (lipopolysaccharide (LPS)-induced RAW264.7 cells) of Safflower seed. First, in order to determine active ingredient contents of Safflower seed, we were carried out total phenol content and total flavonoid content analyses. As a result, dried Safflower seed were found to contain 35.43 ± 0.43 mg GAE/g dry weight and 45.27 ± 7.47 mg NE/g dry weight in boiling water extraction. Also, the major phenolic compounds of Safflower seed from HPLC analysis were identified as indolic compounds (N-(p-coumaroyl)serotonin and N-feruloylserotonin) and flavonoid compound (luteolin-7-O-glucose). In addition, the antioxidant activity of Safflower seed showed IC50 values of 331.39 and 168.19, respectively, against DPPH and ABTS in vitro. With regard to the anti-inflammatory activity, Safflower seed inhibited the nitric oxide production by LPS-activated mouse macrophage-like RAW cells. In conclusion, the results of our study suggest that Safflower seed possess potent antioxidant activity and are also a good source of natural anti-inflammatory drugs.
